Responsible carnivorism or The Beef That Made Me Weep

The big word today was 'responsible carnivorism' and with us in class we had two butchers who run their very own shop and abattoir where they butcher the animals themselves for absolute control and traceability. I admire the dedication and responsibility they showed towards the whole process - animals, feed, product and consumers. I hope to see more of this in the future.

Apart from the roast rib of beef (total bliss and wonderfulness) we learned how to prepare the bits I - for one - rarely use: short ribs, stuffed breast of lamb, neck of lamb and lamb shanks. I now have a serious hankering to learn much much much more about this.

Hur blir man en ansvarsfull köttätare? Först och främst bör man köpa kött som har producerats lokalt och djurvänligt. Sedan ska man lära sig ta tillvara alla delar av djuret. Det som inte frågas efter finns inte heller i butiksdisken.

Dagens lokala producenter på besök i skolan var far och son Muphy. Slaktare i femte och sjätte generationen driver de sin egen köttaffär och sitt eget slakteri i en stad med drygt tio tusen invånare. Förutom att de har pålitliga leverantörer så föder de själva upp djur. De har full kontroll över hela processen och det är något jag hoppas ska bli vanligare hemmavid också.
